I was horrified. I had to bake a cake with no egg yolks, no butter, nothing. Angel Food Cake. My first reaction? You have to be supernatural to get it right. Yes, it tasted differently than any cake I have tasted before, but once you get the hang of it, this thins is like meringue getting married to a cake, skipping all the calories and being as soft as foam. It's amazing. It truly, wholeheartedly is. Give it a go. Just so you don't end up wondering what that thing is really all about.
We are talking about a lot of eggs. Like a lot. Like a dozen of them. If you find a good recipe that will save the egg yolks from going straight into the trash let me know. You will just need the egg whites. No cholesterol, no sweat.
Slice strawberries or pears or apricots, or whatever it is you are craving and add a little confectioner's sugar. Mix with whipped cream and serve. You can also add a little jam, to make a party out of it!
